But in the last 25 years or so, research has shown that it's not just eating a lot of salt that can elevate your blood pressure. It's also not eating enough potassium. When you eat salt, it increases the amount of sodium in your blood, which causes you to retain water, which increases your blood volume, and therefore your blood pressure.
